My parents are visiting. They came into town tonight and I was NOT expecting them to come over for dinner!
Don't get me wrong. I LOVE having them come to dinner because it means I can cook healthy but TASTY food for my dad. My mom's a darling, but she cooks relentlessly healthy low salt, low fat, low cholesterol meals, and she never learned to add flavor with seasonings. And at 84 my dad's tastebuds are not what they used to be....
And they weren't expecting a major meal. In fact, they offered to bring pizza.
Instead they got the following:
Brown Sugar and Bourbon Salmon (I had bought salmon, added marinade and frozen it that way in a big ziplock bag. I just got it out and baked it at 400 degrees F for about 40 minutes)
Tabbouli (made with some of the last tomatoes from our garden and parsley from the plant growing outside our front door)
Plus sliced peppers and baby carrots.
My mother brought cookies. I may fault some of her entrees, but she still makes a mean chocolate chip cookie. And we had Honeycrisp apples, homemade applesauce and pears to offer for fruit.
I'm not up to my sister-in-law's standards--I swear she could do what "Cathy"'s mother did in an animated special--take a single pea and somehow produce an 8 course banquet.
But I noticed my dad took seconds of everything. That alone makes it a major success.......
